  • 2 tablespoons finely chopped scallion
  • 3 tablespoons finely chopped onion
  • 2 tablespoons red pepper cut into small cubes
  • 1 tooth of garlic finely chopped
  • 1 tablespoon finely chopped cilantro
  • 2 tablespoons finely chopped parsley
  • 4 tablespoons of olive oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon salt
  • ½ tablespoon freshly ground black pepper
  1. In a bowl mix the chives and onion
  2. Add the red pepper and garlic
  3. Add the coriander, the parsley and oil
  4. Add the rice vinegar and mix thoroughly
  5. Salt and pepper and rectify the seasoning. Refrigerate ½ hour.
