Ingredients
  1. 1 pound or 500 grams of pork loin, cut into pieces
  2. 2 1/2 tablespoons balsamic vinegar
  3. Kosher salt
  4. 2 teaspoons low-sodium soy sauce
  5. 1 tablespoon of cornstarch
  6. 3 tablespoons of tomato sauce
  7. 3 tablespoons sugar, In addition to a pinch
  8. 3 tablespoons peanut or vegetable oil
  9. 3 chopped cloves of garlic
  10. 2 carrots sliced
  11. 3 spring onions, cut into small pieces
  12. 3 cups of peas, cut in half
Instructions
  1. Mix pork with 1/2 tablespoon of vinegar and a pinch of salt in a bowl. Mix vinegar 2 remaining tablespoons, soy sauce, corn starch, sauce of tomato, 3 tablespoons sugar, water 1/3 Cup salt and 1/2 teaspoon in another bowl.
  2. Heat 2 tablespoons of peanut oil in a wok or large skillet over high heat. Add pork and stir slowly until it turns opaque on, a few 2 minutes. Remove pork with a slotted spoon and transfer to a dish. Discard the oil and clean the Pan.
  3. Heat the rest of 1 tablespoon of peanut in Fryer oil, then, Sauté the garlic with a pinch of sugar, salt and 15 seconds. Add the carrots and onions and saute until they are tender, 2 minutes. (Add a little water if the garlic starts to stick to the Pan) Add pork, peas and soy sauce mixture and stir until the meat is well cooked and the sauce thickens, approximately 3 minutes.
