  • 1 kg. of fat pork loin
  • 8 tablespoons corn oil
  • 120 CC. white wine dry
  • 8 tablespoons brown sugar
  • 4 Green apples, peeled and grated
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground clove
  • 1 1/2 teaspoon ground ginger
  1. Heat the oil in a frying pan and fry the eye to seal all its fibers so that the juices do not escape.
  2. Remove the already sealed meat and place on a metal rack in an oven with water dish, Cook 40 minutes in moderate oven.
  3. Put in the same Pan (discarding half of oil) Black sugar, all spices, wine and grated apples.
  4. Stir with a wooden spoon over low heat, slow and cook until the Apple puree. Remove from the heat, drizzle the pork and serve.
