  • 1 kilo (2 lb) peeled raw shrimp
  • 230 grams (1/2 lb) tomatoes, peeled and finely chopped
  • 115 grams (1/4 lb) butter
  • 1 CDA. olive oil
  • 3 peeled red sweet chilli
  • 1 small onion minced
  • 2 ounces white wine
  • 1 ounce conc
  • Salt
  • pepper
  • 2 CDAS. chopped parsley
  • 1 fishtail Palm
  • 1 celery branch
  • 1/2 carrot
  • 1/2 Leek
  • lemon drops
  1. Put the tail with 2 cups of water, celery, carrot and Leek to boil enough to evaporate to 1 Cup.
  2. Heat oil and butter, Add shrimp and let them 2 minutes. Add the brandy and flambé.
  3. Add wine, fish broth, tomatoes, Onion, parsley, chillies chopped fine, salt and pepper. Boil 5 minutes.
  4. Remove the shrimp. Boil until thickened. Pass through a sieve, mix with shrimp and lemon drops.
  5. Very little heat and serve between a Crown of white rice.
