  • olive oil for frying
  • 4 Mexican tortillas
  • 1 Cup of hummus
  • 1 cup chopped fresh parsley
  1. Preheat the grill, Cut each pepper in 8 pieces, Remove seeds and membrane from the inside and brush with a little oil on all sides. Broil them on both sides until they are soft, Let it cool and peel them.
  2. Lay each tortilla on a little hummus, top with pepper strips, Sprinkle with the parsley and pepper. Wrap the tortillas by tightening them and then cut them into pieces of 4 cm. Serve the burritos with a salad or alone as an aperitif.
