Ingredients
- 150 GR. flour
- 10 GR. fresh yeast
- 1 teaspoon sugar
- 400 CC. warm milk
- 1 black pudding doughnut
- Fresh cilantro
- 1 cup peeled and processed almonds
- 400 GR. cream cheese
- 1 cup dried mushrooms
- 1 Lima
- 1 pinch of cumin powder
- Tabasco Sauce, to taste
- 200 GR. of prosciutto in slices
- Green leaves
Instructions
- In a pot of boiling water, immerse the black pudding for 5 minutes. Remove and extract the pulp. Place in a bowl and reduce to puree. Add salt and pepper.
- Place the flour in a bowl, Dehulled yeast, the sugar and 3/4 Cup of milk, Mix and leave covered 15 minutes, Add the warm milk, olive oil, Black pudding puree, Processed almonds, chopped fresh cilantro, salt and pepper.
- Combine the ingredients until a dense dough is formed. Cover and leave in the fridge for 30 minutes.
- Remove from the fridge and with a spoon remove dough and make tortillas (Blinis) in a frying pan with drops of oil.
- Process the dried mushrooms into a smooth powder, Mix with cream cheese and season with salt, pepper and cumin, Tabasco sauce and lime zest.
- Serve the blinis with prosciutto and greens, drizzled with the cheese and mushroom sauce.
