  • 1 kg of small and thin black Eggplant.
  • 1 large garlic head
  • Cumin
  • Salt
  • Pepper and ground Cayenne ( is puedeusar hot red pepper )
  • 1 small cup of vinegar
  1. Remove the cup of eggplants and cook them in water and salt.
  2. Remove the eggplants from the water and let cool.
  3. Crush the garlic with the cumin, Salt, pepper and Cayenne.
  4. Make a slit along the Eggplant and fill with the mixture of garlic.
  5. Place in a jar or glass dish and cover with the vinegar and little water.
  6. Serve 2 days later
