Ingredients
  • 2 cups instant corn flour
  • 6 cups of vegetable broth
  • 1 clove of garlic
  • Chopped parsley
  • Lemon juice
  • 1 Cup grated gruyere cheese
  • 3 Eggplant
  • Fresh ginger
  • 1 teaspoon of curry
  • 300 GR. of prosciutto in slices
  • Salt and pepper
Ingredients for the sauce
  • 2 tablespoons sugar
  • 1 Cup of vinegar
  • 1 Cup of Ketchup
  • Fresh herbs
  • 1 teaspoon of smoked paprika
  • 1 dry Chile
Instructions
  1. Cook the Eggplant on the stove, turning them constantly, leave to cool and reduced to pure stinging them with knife, season with salt, black pepper and lemon juice. Book.
  2. In a pan place vegetable broth, bring to boil and add the corn flour, heat, stirring constantly with wooden spoon, Add Eggplant puree, season with garlic, chopped fresh parsley, Curry in powder, grated gruyere cheese, grated ginger, salt and black pepper.
  3. Join all the ingredients and pour onto a greased deep. Cover with paper film and leave in the refrigerator for 20 minutes.

For the sauce
