Ingredients
- 1,5 kg of chicken
- 3 teaspoons chopped chilli
- 3 cloves of garlic, bare
- 2 teaspoons of dried green peppercorns, crushed
- 2 teaspoons fine brown sugar
- 2 tablespoons soya sauce
- 2 teaspoons ground turmeric (saffron of the Indies)
- 1 tablespoon of lime juice
- 30 g butter, squares
Instructions
- Preheat oven to 180oC. Cut the chicken along below with a hacheta, and separate it in two by cutting the casing above, among the breasts. Re-stick the tips of the wings so they don't burn. Place the chicken skin-skin up on a rack tray and bake it during 30 minutes.
- Meanwhile, crush the chills, garlic, green peppercorns and sugar in a blender, or crush them in a mortar, until you obtain a homogeneous paste. Add soy sauce, turmeric and lime juice, and put it all down to short raffles until it's well mixed.
- Combine the whole chicken well with the spice mix, distribute the pieces of butter on top and leave it baking other pieces 25 o 30 minutes, or until it's completely roasted. Serve hot or at room temperature, adorned with lime wedges and the fresh aromatic herbs you prefer.
