  • 1,5 kg of chicken
  • 3 teaspoons chopped chilli
  • 3 cloves of garlic, bare
  • 2 teaspoons of dried green peppercorns, crushed
  • 2 teaspoons fine brown sugar
  • 2 tablespoons soya sauce
  • 2 teaspoons ground turmeric (saffron of the Indies)
  • 1 tablespoon of lime juice
  • 30 g butter, squares
  1. Preheat oven to 180oC. Cut the chicken along below with a hacheta, and separate it in two by cutting the casing above, among the breasts. Re-stick the tips of the wings so they don't burn. Place the chicken skin-skin up on a rack tray and bake it during 30 minutes.
  2. Meanwhile, crush the chills, garlic, green peppercorns and sugar in a blender, or crush them in a mortar, until you obtain a homogeneous paste. Add soy sauce, turmeric and lime juice, and put it all down to short raffles until it's well mixed.
  3. Combine the whole chicken well with the spice mix, distribute the pieces of butter on top and leave it baking other pieces 25 o 30 minutes, or until it's completely roasted. Serve hot or at room temperature, adorned with lime wedges and the fresh aromatic herbs you prefer.
