Ingredients
- 3/4 Kg of clams
- 1 Onion
- 2 cloves of garlic
- 1 red chili
- 3/4 l of red wine
- 1/2 dl of olive oil
- chopped fresh parsley
- 2 tomatoes
- the juice of half a lemon
- Salt
- ground black pepper.
Instructions
- Wash the clams under running water and reserve them in a drainer. Peel and chop the onion and garlic cloves very often.
- Blanch tomatoes, peel them, Remove the seeds and cut them into cubes. Open the chili in half, Remove the seeds and finely chop.
- Heat the oil in a pan and fry the onion until softened and transparent. Add the garlic and continue sautéing during 1 minute. Add the tomato and chili and sauté 5 more minutes.
- Season with salt, Negara and ground pepper and lemon juice. Cook 2 more minutes, Water with wine and bring to a boil. Let cook over high heat for 5 minutes.
- Add the clams, Cover and cook until opened. Discard those that are closed and transfer the rest to a source. Sprinkle with parsley and serve.
