Carrot cake with mascarpone icing

Today I made a carrot cake with mascarpone icing, i.e., a carrot with cream cheese mascarpone cake.
I really like this cake because it's very spicy cinnamon, Walnut nutmeg and ginger and I love that combination.

The sponge cake of carrot has a taste very typical, delicious and is perfect for those who are not very loving sweet all are advantages!!

This cake is a good option to take in the snack or during the desktop after eating. I hope you enjoy it so much as my!

  • Prep: 45 mins
  • Cook: 2 hrs
  • Yields: This recipe leaves an amount of dough for a cast of 15cm in diameter and 10cm high.

Directions

1Preheat the oven to 180 º.

2Peel the carrots, the grate and reserve.

3Pour in a Bowl at room temperature butter and brown sugar and beat until blended started.

4Add eggs one one stirring constantly.

5Add cinnamon, nutmeg, the ginger and the pinch of salt.

6Then add the carrot grated and continue beating.

7We sift the flour and the yeast and add half of this mixture to the Bowl. To the beat remember you of cover with a cloth so that not is fill the kitchen of flour.

8We add the 3 tablespoons of milk and continue beating.

9Finally add the rest of the flour and beat during a couple of minutes until all the ingredients are well integrated.

10Bake at 180 º ones 45-50 minutes.

Preparation of the icing of mascarpone:

1-Beat butter at room temperature with the icing sugar and the mascarpone.

2-We beat all during 3-4 minutes.

Ingredients

-130g butter.

-200g brown sugar.

-2 teaspoons cinnamon. (You can get one if not the cinnamon you like so much as my)

-1/2 teaspoon ground nutmeg.

-The tip of a teaspoon of ginger.

-3tablespoons milk.

-1pinch of salt.

-2 eggs.

-170g carrot.

-200g flour.

-3 teaspoons yeast.

Ingredients for the mascarpone icing:

-400g icing sugar (or confectioners sugar if you don't have icing sugar).

-100g butter.

-250g mascarpone.
