For the sauce
  • 1/2 large yellow onion
  • 1/4 Cup of olive oil
  • 2 medium-sized cloves of garlic, peeled and chopped
  • 1 Tin (28 Oz) crushed tomato (We used Muir Glen-)
  • 1 teaspoon dry oregano
  • A pinch of red pepper flakes
  • A pinch of sugar
For the chicken
  • 4 cutlets of chicken breast of chicken (1 1/4 to 1 1/2 pounds in total)
  • Salt
  • 2 eggs
  • 1 Cup of bread crumbs
  • 1 Cup freshly grated Parmesan cheese
  • 1 / 4 Cup of olive oil
  • 2 tablespoons leaves fresh basil cut in thin slices
  • 8 ounces sliced mozzarella cheese
Instructions
  1. Prepare the sauce. Coarse grating half of an onion. Grate the onion will create small pieces of onion and the release of more onion juice, and is faster to cut. Heat the olive oil in a saucepan over medium-high heat. Add the onion and saute for 2-3 minutes. Add the chopped garlic. Cook until fragrant, about one minute more. Then, Add tomatoes, oregano, red pepper, and sugar. Bring to simmer, reduce the heat to maintain the fire slow. Cook, uncovered while preparing chicken (a few 10-12 minutes).
  2. Preheat the oven to 400 ° F. Working one at a time, place a fillet of chicken between two sheets of waxed paper (or plastic wrap). With a meat grinder, the pound the pieces of chicken to flatten to a uniform thickness - between 1 / 4 – 1 / 2 inch. (If you don't have a meat grinder, a rubber mallet can be used, an empty wine bottle, or a heavy roller.) Salt and chicken pieces.
  3. In a shallow Pan (big enough to dredge the pork chops), mix bread crumbs, 1 / 2 Cup of Parmesan cheese and a pinch of salt. In a shallow Bowl, Beat together eggs.
  4. Hot 1 / 4 Cup of olive oil in a large skillet over medium-high heat. The oil should be bright, not smoking. Dredge chicken pieces one piece at a time first in the egg mixture and then in the breadcrumbs. Then put the pieces in the Pan hot. Turn the heat to medium, and then saute the chops until browned, approximately 3-4 minutes per side.
  5. Spread the tomato sauce thick enough to cover the bottom of a 9 × 13 casserole or pan for baking. Once the pork chops are golden brown on both sides, place them at the top of the tomato sauce in the dish for baking. Put the sauce over each of the chops. Sprinkle the top with the cut Basil. And top Chops with slices of mozzarella and the cup of the 1 / 2 Parmesan cheese.
  6. Bake in the oven for 10-12 minutes, or until mozzarella begins to Brown.
  7. Serve with spaghetti and the sauce remaining, or on a large roll.
