It is a recipe with many ingredients. Really it is worth doing it, because they are the best legs of pork from the West :)

Ingredients
- 2 kilos of legs of pork in pieces
- 2 lemons
- 4 1/2 cups of water
- 3 teaspoons salt
- 1/3 cup oil
- 2/3 Cup minced onion
- 4 garlic cloves, crushed
- 2 cups, 1/2 kilo, tomato chopped, without skin or seeds
- 1 red pepper chopped
- 1 teaspoon minced chili or 1/4 teaspoon if it is dry ground
- 1 tablespoon chopped sweet pepper
- 1 or 2 sweet peppers
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 2 1/2 cups of the water in which the legs are cooked.
Instructions
- The legs of pork passed by the flame of the burner to remove them any hairs that may still have. Are they scraped with a knife, rubbing with lemon and wash very well and are cooked for a few 30 minutes in a pressure cooker with water and salt.
- In a pot add oil to heat, Add the onion and garlic, FRY until wilt. Add the tomato, paprika, Chili, the sweet pepper, salt and pepper. It is a boil and cooked for a few 10 minutes. Add the legs with 2 1/2 cups of the cooking water and over medium heat cook covered by 30 minutes or until the sauce thickens a little.
