Ingredients
- Lomo 1 1/2 kg.
- Onion 1 u.
- Carrots 3 u.
- Mushrooms 150 GRS.
- Dry white wine 1 Cup.
- Raw ham 100 GRS.
- Butter 3 CDAS.
- Flour 1 CDA.
- Broth 1 Cup.
- Salt and pepper c/n.
Instructions
- Clean the back, remove excess fat and nerves. Add salt and pepper.
- Place in hot oven topped with butter, Cook over low heat so dipping broth.
- Chop the onion and cut the carrots into thin slices. Brown them in butter with the ham cut into cubes, incorporate the flour for thickening.
- Stirring constantly, join the wine and broth. Cook 10 minutes approx..
- Incorporate the mushrooms, Let it boil and remove from heat.
- Cut the tenderloin into medallions, and cover with the sauce. serve alone or with peas sautéed in butter.
